Using this definition, there are many very interesting ways to build your own RepStrap. There is a really good list of RepStrap projects on RepRap.org's RepStrap page. I will list the ones that I find the most interesting and relevant below.

Wolfstrap -- A very nice wood Mendel based RepStrap.
McWire Cartesian Bot -- A RepRap built from the gas pipe framed CNC machine I am/was planning on building. This is essentially the device that helped start the RepRap revolution and Makerbot Industries seems to owe it's existence to this design. Bre Pettis, one of the founders of Makerbot, built one of these on his "Weekend Projects" video blog for Make Magazine. You can also look at the original Instructable for the CNC
RepRap 1x2 -- A RepStrap Mendel made of 1x2 lumber, standard skate bearings, and simple hardware. There are kits available in the RepRap 1x2 store. You can also see the project on Thingiverse.
Conedel -- A RepStrap kit which is cast instead of printed. The parts or molds are available for purchase on the Metrix Create:space website.
Commercial kits/machines.
Repman -- A Darwin based, ready to print, machine sold by a UK firm.
Makerbot -- An attractive little printer kit inside a laser cut wood shell.
